Tortilla Pizzas


1 lb. ground beef 1 small onion chopped
1/2 c. chopped green onion 3 cans tomato paste
1 1/4 c. water 1 c. salsa
2 c. corn 1 1/2 c. chopped tomatoes
3/4 c. chopped olives 1 packet taco seasoning
3 Tbsp. garlic powder 1 1/2 tsp. dried parsley
1/2 tsp. dried oregano 1/8 tsp. salt
1/4 tsp. pepper 32 corn tortillas or flour tortillas
8 c. shredded mozzarella cheese
•Brown hamburger, onion and green pepper. Combine tomato paste, taco season packet, and salsa. Stir into meat. Add corn, tomatoes and olives. Place tortillas on an ungreased cookie sheet. Put 1/4 c. meat mixture on each. Top with mozzarella cheese. Bake at 375º for 5-7 minutes.

Whole Wheat Pancake Mix

5 c. white flour
5 c. whole wheat flour
1/2 c. sugar
1/4 c. baking powder
2 Tbsp. salt

Combine all ingredients in a large bowl.  Stir together to blend well.  Put in a large airtight container.  Label.  Store in a cool, dry place.  Use within 6-8 months.  Makes about 13 c. pancake mix.

Pancakes:

1 c. mix
1 c. water
1 egg

Mix well, fry in pan or cook in waffle iron.

Oatmeal Chewies


Crust:
1 c. butter
2 c. brown sugar
2 eggs
2 tsp. vanilla
2 c. flour
2 c. oatmeal

Filling:
15 oz. sweetened condensed milk
12 oz. bag chocolate chips
2 Tbsp. butter
1/2 tsp. salt
1 c. nuts
2 tsp. vanilla

Cream butter and brown sugar together. Add eggs and vanilla. Sift flour, soda and salt together. Stir in oats. Add to butter and sugar mixture. In heavy saucepan over low heat. Melt filling ingredients together just barely. Grease 9x13 pan. Pat 2/3 oatmeal crust mixutre into the bottom of pan. Spread with chocolate filling. Dot remaining crust dough on top of chocolate filling. Bake at 350º for 25-30 minutes. Cool and cut into squares.

Inside-Out S'Mores Brownies



1/2 c. butter
2 oz. unsweetened chocolate (may substitute 2 heaping Tbsp. cocoa)
1 c. sugar
2 eggs
1 tsp. vanilla
3/4 c. flour
9 graham crackers
1 c. miniature marshmallows (or more)

Preheat oven to 350º. Line a 11x7 baking pan with parchment paper or lightly grease the pan. In a medium saucepan melt butter and chocolate over low heat. Remove from heat. stir in sugar, eggs, and vanilla. Stir in flour.

Spread half the batter in the prepared pan. Top with graham crackers. Sprinkle marshmallows on the graham crackers. Spread remaining batter on the marshmallows and graham crackers, covering them completely.

Bake for 25 minutes or until set. Cool completely and cut into bars. Makes 15 brownies.

Whole Wheat Pizza Dough


4 c. whole wheat flour
3/4 c. white flour
1/4 c. corn meal
1 1/2 Tblsp. honey
1 1/2 tsp. salt
1 1/2 tsp. instant yeast
2 Tbsp. olive oil
2 cups very warm water

Mix all ingredients together. Mix on low for 3 minutes. Increase the speed to medium and continue mixing for 2 more minutes. Let raise 1/2 hour. Knead. Use dough to prepare pizzas. Store in Fridge up to 3 days.

Multigrain Pizza Dough with Honey

4 c. unbleached flour
3/4 c. whole wheat flour
1/4 c. corn meal or whole wheat flour
1 1/2 Tbsp. honey
1 1/2 tsp. salt
1 1/2 tsp. instant yeast
2 Tbsp. olive oil
2 c. warm water

Mix all ingredients together. Mix on low for 3 minutes. Increase the speed to medium and continue mixing for 2 more minutes. Let raise 1/2 hour. Knead. Use dough to prepare pizzas. Store in Fridge up to 3 days.

All Purpose Pizza Dough

Prep: 20 minutes

5 c. unbleached bread flour
1 Tbsp. sugar or honey
1 12 tsp. table salt or 2 1/2 tsp. coarse kosher salt 1 tsp. instant yeast, also called bread machine yeast or fast rising yeast
2 Tbsp. olive oil
1 3/4 c. plus 1 Tbsp. water, room temperature

Mix all ingredients on slow speed for 3 minutes until all ingredients are well combined. Increase the speed to medium and continue for 2 minutes. Mix until smooth. Mix an additional 3 minutes on medium speed.
