1 lb. ground beef 1 small onion chopped
1/2 c. chopped green onion 3 cans tomato paste
1 1/4 c. water 1 c. salsa
2 c. corn 1 1/2 c. chopped tomatoes
3/4 c. chopped olives 1 packet taco seasoning
3 Tbsp. garlic powder 1 1/2 tsp. dried parsley
1/2 tsp. dried oregano 1/8 tsp. salt
1/4 tsp. pepper 32 corn tortillas or flour tortillas
8 c. shredded mozzarella cheese
•Brown hamburger, onion and green pepper. Combine tomato paste, taco season packet, and salsa. Stir into meat. Add corn, tomatoes and olives. Place tortillas on an ungreased cookie sheet. Put 1/4 c. meat mixture on each. Top with mozzarella cheese. Bake at 375ยบ for 5-7 minutes.
