Caramel Pull Apart Bread

Bread:
1 cup packed brown sugar
1/2 cup light corn syrup
1/2 cup butter or margarine
1 cup coarsely chopped pecans, optional 
20 frozen roll dough (like Rhodes)  I use the 1 hour recipe found in breads.




Frosting:
1 cube butter
4 cups powdered sugar
1 tsp. vanilla
milk


1.  In a saucepan, combine the brown sugar, corn syrup, and butter; cook and stir until sugar is dissolved.  Add the pecans if using.  Pour into a greased 9x13x2 inch baking pan.

2.  Top with frozen roll dough.  Let raise for about 5 hours (or overnight if desired).  When rolls have raised bake at 350℉ for about 20 minutes until rolls are browned and cooked through.  Invert onto a serving platter or cookie sheet.  Whip butter.  Add vanilla, powdered sugar, vanilla and enough milk to make a soft butter cream icing.  Drizzle icing over bread and serve warm.

Navajo Fry Bread

4 c. flour
1 tsp. salt
1 Tbsp. baking powder

Sift together, then add

2 1/4 c. milk
3 Tbsp. oil

Mix well.  Shape into scones.  Deep fry.

One Hour Rolls



1 1/4 c. milk
1/3 c. water
2 T. yeast
3 T. butter
1/4 c. sugar
1 1/2 tsp. salt
2 eggs, beaten
4 c. flour

Put milk into a saucepan.  Heat until very warm.  Remove from heat.  Add butter.  Let melt.  Add sugar, salt, water and two beaten eggs.  Mix well and add the yeast.  Mix.  Now add 2 c. flour and stir mix well.  Add additional 2 cups (may need more) flour and stir until just mixed.  Cover bowl with a towel and let raise for 20 minutes.  

After 20 minutes make into rolls, cinnamon rolls etc.  
Bake for 15-20 minutes at 350ª.

To make dinner rolls cut dough in half.  Roll each half into a circle.  Spread with butter.  Cut 12 rolls from each circle in a pie like fashion and roll up starting at the wide end.  Let raise an additional 20 minutes.  Makes 24 rolls.

Whole Wheat Pancake Mix

5 c. white flour
5 c. whole wheat flour
1/2 c. sugar
1/4 c. baking powder
2 Tbsp. salt

Combine all ingredients in a large bowl.  Stir together to blend well.  Put in a large airtight container.  Label.  Store in a cool, dry place.  Use within 6-8 months.  Makes about 13 c. pancake mix.

Pancakes:

1 c. mix
1 c. water
1 egg

Mix well, fry in pan or cook in waffle iron.

Whole Wheat Pizza Dough


4 c. whole wheat flour
3/4 c. white flour
1/4 c. corn meal
1 1/2 Tblsp. honey
1 1/2 tsp. salt
1 1/2 tsp. instant yeast
2 Tbsp. olive oil
2 cups very warm water

Mix all ingredients together. Mix on low for 3 minutes. Increase the speed to medium and continue mixing for 2 more minutes. Let raise 1/2 hour. Knead. Use dough to prepare pizzas. Store in Fridge up to 3 days.

Multigrain Pizza Dough with Honey

4 c. unbleached flour
3/4 c. whole wheat flour

1 1/2 tsp. salt
1 1/2 tsp. instant yeast
2 Tbsp. olive oil
2 c. warm water

Mix all ingredients together. Mix on low for 3 minutes. Increase the speed to medium and continue mixing for 2 more minutes. Let raise 1/2 hour. Knead. Use dough to prepare pizzas. Store in Fridge up to 3 days.

All Purpose Pizza Dough

Prep: 20 minutes

5 c. unbleached bread flour
1 Tbsp. sugar or honey
1 12 tsp. table salt or 2 1/2 tsp. coarse kosher salt 1 tsp. instant yeast, also called bread machine yeast or fast rising yeast
2 Tbsp. olive oil
1 3/4 c. plus 1 Tbsp. water, room temperature

Mix all ingredients on slow speed for 3 minutes until all ingredients are well combined. Increase the speed to medium and continue for 2 minutes. Mix until smooth. Mix an additional 3 minutes on medium speed.

Frozen Dinner Rolls from Kellie Harris

5 1/2 to 6 1/2 c. flour
1/2 c. sugar
1 1/2 tsp. Salt
2 packages yeast (2 1/4 tsp = one package)
1 1/4 c. water
1/2 c. milk
1/3 c. butter
2 eggs (at room temperature)

In a large bowl thoroughly mix 2 cups flour, sugar, salt and undissolved yeast. Combine water, milk, and butter in a saucepan. Heat over low heat until liquids are very warm (120-130º). Butter does not need to melt. Gradually add to dry ingredients and beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add eggs and 1/2 c. flour. Beat at thigh speed two minutes, scraping bowl occasionally. Stir in enough additional flour to make a soft dough. Turn out onto lightly floured board; knead until smooth and elastic, about 8-10 minutes. Cover with plastic wrap, then a towel, let rest twenty minutes.
Punch dough down. Shape into desired shapes for dinner rolls and place on sprayed baking sheet. Cover with plastic wrap and let rise until doubled. (Approx. 30-40 minutes.) Bake @ 350º for 15 minutes

Freezer method: Place on greased baking sheets. Cover with plastic wrap and foil, sealing well. Freeze until firm, transfer to plastic bags. Freeze up to four weeks. Remove from freezer, place on greased baking sheets. Cover, let rise in warm place, free from draft until doubled in bulk, about 1 1/2 hours. Bake at 350º for fifteen minutes or until golden brown and done. Remove from baking sheets and cool on wire racks.

Crescent style: Roll out portions of dough in a circle about the size of a dinner plate. Using a pizza cutter, cut triangles as if cutting a pizza. Roll each triangle from the biggest to the shortest end tucking the point underneath the roll.

Banana Nut Bread

From Kitchenaid book

1/3 c. shortening ( I use butter)
1/2 c. sugar
2 eggs
1 3/4 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. ripe bananas mashed
1/2 c. chopped walnuts or pecans

Cream sugar and butter.
STir in eggs. Sift dry ingredients together. Add Alternately with bananas to sugar mixture. Add Vanilla. Pour into greased loaf pans. Bake @ 350º for 30 minutes or until toothpick comes out clean.

Biscuits Supreme

Biscuits Supreme
2 c. flour
1/2 tsp. salt
4 tsp. baking soda
1/2 tsp. cream of tarter
2 tsp. sugar
1/2 c. shortening
1 c. milk

Mix all dry ingredients and cut in shortening. Add milk and beat. Drop or roll on greased pan. Bake at 450º for 10-12 minutes.

Cinnamon Rolls

Cinnamon Rolls - From Harve

1 c. milk
1 square butter
-Scald, let cool then add to:
1/3 c. warm water
1/2 c. sugar
1 1/2 T. yeast
-Mix well then add:
2 eggs
1/2 T. salt
Flour

Bake @ 375º for 9 minutes.
