Southwest Chicken Burrito

2 lbs. boneless chicken
1/2 c. prepared bbq sauce
1 c. black beans, rinsed
1/2 c. frozen corn
1/4 c. reduced fat sour cram
4 leaves romaine lettuce
4 10 inch tortillas
2 limes cut into wedges

Place chicken, bbq sauce, beans, corn, and sour cream into skillet.  Cook until hot.  Squeeze limes into meat mixture.  Assemble wraps by placing a lettuce leaf in the center of each tortilla and topping it with one fourth of the chicken mixture.  Roll like a burrito.

Golden Graham S'mores


3/4 c. corn syrup
3 Tbsp. margarine
1 pkg. chocolate chips
1 tsp. vanilla
9 c. Golden Grahams cereal
2 c. mini marshmallows

Heat corn syrup, margarine, and chips to a boil, stirring constantly.  Remove from heat.  Add vanilla.  Pour over cereal in a large bowl.  toss until completely coated.  Toss in marshmallows.  Press mixture into a greased 9x13 pan.

Coconut Candy (Like Almond Joys)


1 c. sugar
1 1/3 c. karo syrup
3/4 c. water
1 Tbsp. flour
1 tsp. vanilla
10 oz. macaroon coconut
6 oz. flake coconut

Cook sugar, karo, and water until it starts to boil.  Wash down sides of pan.  Cook to 218º.  Remove from heat and add flour, vanilla, and both coconuts.  drip by teaspoonful on waxed paper.  As soon as it cools, mold.  Put almond on some and cover with chocolate coating.

Peanut Butter Balls (or centers for peanut butter cups)

1 c. peanut butter
1 cube imperial margarine
1 tsp. vanilla
powdered sugar

Mix well adding enough powdered sugar to make a stiff consistency.

One Hour Rolls



1 1/4 c. milk
1/3 c. water
2 T. yeast
3 T. butter
1/4 c. sugar
1 1/2 tsp. salt
2 eggs, beaten
4 c. flour

Put milk into a saucepan.  Heat until very warm.  Remove from heat.  Add butter.  Let melt.  Add sugar, salt, water and two beaten eggs.  Mix well and add the yeast.  Mix.  Now add 2 c. flour and stir mix well.  Add additional 2 cups (may need more) flour and stir until just mixed.  Cover bowl with a towel and let raise for 20 minutes.  

After 20 minutes make into rolls, cinnamon rolls etc.  
Bake for 15-20 minutes at 350ª.

To make dinner rolls cut dough in half.  Roll each half into a circle.  Spread with butter.  Cut 12 rolls from each circle in a pie like fashion and roll up starting at the wide end.  Let raise an additional 20 minutes.  Makes 24 rolls.

Chicken Tostada Salad

Chicken Tostada Salad
1 grilled chicken Breast
1 head romaine lettuce
½ cup creme fresh
½ cup Cotija cheese
4 fresh corn tostadas
1 can refried beans
2 oz. spicy tomato vinaigrette
1 cup cabbage slaw (shredded cabbage, radishes, & lime juice)
1cup pico de gallo
  

Cut chicken into 1/4 inch chunks chop romaine and toss lettuce with chicken, slaw, cabbage, pico de gallo and dressing. Spread heated beans over one side of the tostadas, place salad over tostadas then stack them on top of each other. Drizzle the creme fresh evenly over the salad and sprinkle the cheese on top and your salad is complete
